Welcome to Menu Plan Monday! Last week’s “mostly meatless” menu was interesting. Surprisingly, the boys devoured the tofu and snow peas from my recipe last week. Collard greens made a great subsitute for the baby bok choy, which I couldn’t find around here. The tofu was excellent. I used Melissa’s brand extra-firm and it held a really nice texture in the stir-fry.
At the same time, I felt like a junkie about to go on a bender; all week, the only thing I could think about was bacon and steak. I don’t even eat bacon and steak all that often. I think it’s the psychology of it. We want what we think we can’t have, right? So here’s to moderation. A little bacon, a little tofu, and a little less crankiness for me. Monday
Vegetarian chili over baked potatoes (we love this, easy and yummy – I use canned veggie chili in a pinch)
Tuesday
Slow Cooker Carnitas
Tortillas, avocado, salsa, etc. (check out my self restraint making a healthier recipe in the slow cooker; I saw a version from Emeril that has you boil then fry the pork in lard. As Emeril says, “pork fat rules”. Instead of being repulsed, I was attracted. I want to make it but then I’ll have to log it on My Fitness Pal. Waaah.)
Wednesday
Chicken saute – chicken breast sauteed with red pepper and broccoli (or whatever veggies you have) then tossed with jarred low-fat Alfredo sauce.
Thursday
Smoky Corn Chowder from Real Simple mag
Whole grain rolls
Friday
Pizza night – we’ll find the best pizza deal in town. Often it’s at Hy-Vee for us.
Saturday
Chicken and Dumplings made with chicken quarters and whatever I have here – I just throw this together.
Sunday
Boilermaker Chili (fantastic game-day chili recipe!)
Cornbread













that sounds like a vegetarian week around here. (except hubby would be complaining the whole time) I love meat too much to go completely vegetarian but I do try to cut it out at least once or twice a week. Enjoy your week!
We have weeks like this too! I am trying to go veg completely but it’s hard with the rest of the family still eating meat. I try to find veg recipes where I can just add meat to appease my hubby. I have never much cared for meat other than chicken so it’s not that much of a stretch for me.

Growing up I worked at a Mexican restaurant and we always cooked to carnitas in lard. And it was good.
And I am sure just awful for us. I will have to try yours!

Hehe yeah my husband wasn’t overly enthusiastic about the tofu but he didn’t complain. I’m always looking for meatless entrees that they’ll all eat yet still have protein.
